The New York strip is cut from the beef short loin, right behind the rib area. It's a medium, marbled, beefy steak that is both firm and tender. It goes by many other names, including strip loin steak, Omaha strip, Kansas City strip steak, ambassador steak, or simply strip steak.  Since the muscle doesn’t do a lot of work there is plenty of marbling, it’s the perfect balance of tenderness and chew that many people love.
